They're just for illustrational purposes. Illustrationals of humans, which are of course different from animals. Some animals don't even have genders. I know, right? Seriously.

Ummmmmm, you really ought to pay closer attention to the formation of the word "peacock" pea-COCK. Not female. A female peacock is a peahen, and they don't have spectacular feathers. Sorry to get technical, but I wouldn't have used that species as an illustration of a female.
